Flavor tomatoes with oil and lemon sauce 15 min prior to serving. Let them sit out at room temperature.

PESTO SAUCE;

Grind pistachios and basil at the lowest setting of Vitamix. Add all ingredients, and pulse slowly at the lowest setting before putting it on a clean bowl.

PRESENTATION;

Put tomatoes in the center; add Maldon salt and olive oil. Use a spoon to place the pesto sauce in between the tomatoes. Add mozzarella on top of the tomatoes. Break the leaves of purple basil with your hand and sprinkle on the mozzarella.
